Irish Favorites + Spring Chicken
We're all Irish on St. Patrick's Day, so let's eat right. (Also, yes, we always need another chicken recipe.)
Hello, friends!
I hope you had a great weekend. We're all Irish tomorrow, so of course I want to start off with a roundup of all my favorite Irish recipes, like soda bread, Philly Irish potato candies--my childhood (and adulthood) favorites--and a shepherd's pie made from ground beef so it's less fuss.
Looking toward the rest of the week, I'll be making chicken cacciatore, a favorite one-pan Italian standby. I love this family recipe. I think it’s a truth universally acknowledged (hat tip to Jane Austen) that we always need chicken recipes, so I’m also including a few extra favorites. Enjoy, and have a great weekend!

Lucky Us: Nine St. Patrick's Day Recipe Ideas
From two types of soda bread to an easy ground beef shepherd's pie to colcannon and chocolate Guinness cake, here is a roundup of Irish-inspired recipes to celebrate our heritage, because we're all Irish on St. Patrick's Day.
And don’t sleep on Irish Potato Candies. These coconut cream bonbons rolled in cinnamon are a Philly tradition and one of the best little no-bake desserts you’ll ever have.
Chicken Dinners
My theory is that unless you are vegetarian or vegan, we all need chicken recipes. These are my top-three standbys, each easily doable as a weekday meal.
Chicken Cacciatore: This one-pot Southern Italian tomato, peppers, and chicken stew has been a family staple for weeknight dinners and celebrations since...forever. You'll love it, too.
Classic Roast Chicken: A good roast chicken should be in everyone's cooking repertoire. The secret to a moist, flavorful one? Read on.
White Bean Chicken Chili: Rotisserie to the Rescue! A true winner, winner chicken dinner. All you need is beans, a rotisserie chicken, and a few other basic ingredients.
Something for Dessert: Strawberry Shortcake:
Every time I make strawberry shortcakes, I ask myself, “How can something this simple be this good?” This is an essential dessert recipe you'll want to have ready for spring. Just make a little batch of biscuits, top with sweetened strawberries and whipped cream, and you have a perfect dessert.
