Celebrate Summer Food
Father's Day! Juneteenth! You made it to the weekend! Festive summer recipes + foods to ring in the week ahead.
Hello, friends! How’s the week been? I’m in New York City for a few days, hoping to check off a couple of museum exhibits I’ve been eyeing. There are some great ones right now, like the reopened Frick (wow), Amy Sherald at the Whitney, and Sargent & Paris at the Met.
And, of course, I’m gonna eat. Have you heard that Bradley Cooper (yes, that one) opened a cheesesteak place? It’s actually supposed to be amazing. This Philly native can’t wait to see for herself. I’ll be posting about that (and other favorite NYC food finds) on Instagram, so come follow along!
This is also a celebration week, with Father’s Day and Juneteenth. So here are some recipes for breezy summer celebrating, plus a recipe plan to get you through the week—starting with my favorite summer salads.
Have a wonderful weekend, everyone. Thanks, as ever, for being a part of Unpeeled Journal. Xx Lisa
Southern Tomato Sandwiches
Forget the B + L. Turns out, the T is all we ever needed (plus a nice slather of good mayo). This simple classic is the best way to welcome tomato season.
And while we’re on the subject of tomatoes…
I love this simple, light Tomato + Cucumber Halloumi Salad, tossed with (or without) salty, pan-fried halloumi. You can also substitute feta.
One-Step Zucchini Bread
This moist zucchini bread is summer’s answer to banana bread: homey, easy to make, and beloved by all. Just dump, stir, and bake!
And while we’re on the subject of zucchini…
Every summer, I wonder what to do with All! That! Zucchini! And inevitably, the answer is this Italian zucchini ribbon salad.

Let’s keep it simple and satisfying this week. Here’s what I’ll be making. Click on the titles to get the recipes:
The Ultimate Overnight French Toast: start dad’s day off right this Father’s Day. Topped with a gooey pecan topping, this is is insanely good.
Elote Salad: Perfect as a summer side for dinner or a barbecue, this Mexican corn salad is a favorite.
Italian-Style Chicken Tenders: A favorite for kids of all ages
No-Churn Cookies + Cream Ice Cream: grab some Oreos and sweetened-condensed milk. This is easy as buying Ben & Jerry’s, but a lot more fun.

My absolute favorite summer food is slow roasted sumgold tomatoes!
