Best Easter Recipes + Meals (Literally) Out of This World
🌸Spring casseroles, PB Eggs, desserts + ask NASA's food scientist a question
Hello, friends!
I hope this week has been a good one. Mine’s been jam packed — literally. I’ve been busy writing a rather large Washington Post article taste testing Meghan, Duchess of Sussex’s new As Ever raspberry jam!
I was hoping it would be published by the time I sent out the newsletter, but they’re still doing a few last-minute layout things, so I’ll be sure to include it next week. (Oooh…just wait until you hear which jam won.)
In the meantime, there’s lots of good food on the front burner this week. Below, some fabulous casseroles, ham and bean soup, and my favorite Easter desserts and sweet treats.
A final note: Be sure to scroll to the end of this newsletter! I’m interviewing NASA’s chief food scientist soon, and you, my dear subscribers, have a chance to submit a question!
Easter Sunday is this weekend. Whether you are celebrating or not, spring is such a good time of year for eating. Below are some favorite casseroles (total crowd pleasers), as well as tasty ideas for what to do with leftover ham.
And we’ve gotta eat dessert, of course! Below, I rounded up all my favorite Easter desserts, like my new recipe for Chocolate Peanut Butter Eggs (yep, better than Reese’s), the Tom Cruise coconut cake, cinnamon buns, strawberry cheesecake, and more.
The Best Casseroles

Click on the title below to get the recipe. Clockwise starting from top left:
Italian Artichoke Casserole: light, seasonal, and fuss free thanks to frozen artichoke hearts
Easy No-Bake Noodle Lasagna: I use cottage cheese for extra flavor and creaminess
Ina’s Cauliflower Casserole: Wow is this good. Of course it is; it’s from Ina!
Spinach Artichoke Dip Made With Fresh Spinach: I honestly could eat the entire bowl myself
The Best Easter Desserts
I rounded up all the best Easter desserts into one place. These lovely recipes cover everything: cakes, cookies, cinnamon rolls, cheesecake, and more.
Leftover Ham? Great! Make this:
Senate Bean Soup is always on the daily menu at the U.S. Capitol, and has been for over 100 years. Magically, the recipe is only three ingredients, and tastes delicious.
Calling all space nerds (like me)!
Want to ask NASA’s food scientist — the one who’s fed the actual astronauts on the shuttles and International Space Station — a question or two? You can!
This is exciting. In a few weeks, as part of my relaunched (yay!) profiles of women in food series, I’m interviewing NASA’s longtime food scientist about the space food program: What astronauts eat, how NASA meets the astronauts’ nutritional needs, how nutrition differs in space, celebrating birthdays and holidays in space, doing dishes in zero gravity…so many questions!
